Title:ANALIZA REZULTATOV PITANJA TELET “POHORJE BEEF”

Abstract:Cilj diplomskega dela je bil analiza pitanja starejših telet po tehnologiji "Pohorje beef". Narejena je bila anketa ekoloških rej Pohorja in Kozjaka (n=49) in analiza rastnosti in klavne kakovosti. V analizi so bili zbrani podatki iz slovenskih klavnic za pet let (2003—2008) in sicer za ekološko vzrejena teleta po tehnologiji "Pohorje beef" (n=634), starejša teleta različnih genotipov iz široke reje (n=2980) in mlado pitano govedo iz istih rej (n=271). Anketirane kmetije so usmerjene v rejo krav dojilj lisaste pasme in vzrejo starejših telet križanja lisasta×limousin, a zaradi nespodbudnih cen je interes rejcev za prodajo pod blagovno znamko"Pohorje beef" majhen. V strukturi zakola so teleta vzrejena po tehnologiji "Pohorje beef" predstavljala 17% vseh starejših telet. Ob zakolu so imela v 204 kg klavne mase pri 328 dneh starosti. Neto dnevni prirast klavne mase trupa je bil 627 g/dan. V primerjavi s čistopasemskimi teleti iz široke reje so priraščala bolje, razlike z mesnimi križanci so bile neznačilne. Po konformaciji so bila boljša v primerjavi z vsemi genotipi starejših telet iz široke reje. Primerjava z mladim pitanim govedom iz istih rej je pokazala, da podaljšano pitanje teh telet ekonomsko ni zanimivo. Za 110 dni starejše živali iz istih rej so bile le 19 kg težje, kar kaže na zastoj v rasti, ki se odraža tudi v nižjih (17%) prirastih in manjši omišičenosti. Značilna interakcija med spolom in starostno kategorijo kaže na to, da so bile posledice daljšega pitanja manj izražene pri telicah kot bikcih.

Title:ANALYSIS OF REARING RESULTS FOR “POHORJE BEEF” CALVES
Abstract:The aim of the study was to analyse results of rearing older calves respecting constraints of “Pohorje beef” trade mark (suckling cows, organic rearing, Simmental×Limousine cross, 12 month of age). A survey was performed on organic farms of Pohorje and Kozjak (n=49) and carcass quality of beef cattle analysed. Data was collected from Slovenian abattoirs in five-year period (2003–2008). We compared calves “Pohorje beef” (n=634) to older calves of different genotypes (same category but unknown rearing systems; n=2980) and to young cattle of the same crossing from the same, organic farms (older category 12–24 month; n=271). The prevailing system on the surveyed farms is “Pohorje beef”; however, their interest to sell the veal under this trademark is low, due to low prices and bad organisation of purchase. “Pohorje beef” calves were 328 days old and had 204 kg of warm carcass weight, giving 627 g/day net daily gain of warm carcass. They exhibited better net daily gains and conformation compared to older calves of pure breeds, while the differences with meat breed crosses were insignificant. The comparison to older category of the same genotype (same farms) showed that prolonged rearing is not economically interesting. Although 110 days older, young organic cattle of the same genotype was only 19 kg heavier than “Pohorje beef” calves, demonstrating growth stagnation, reflected in lower net daily gain and lower conformation. Significant interaction between the sex and age category indicates that the consequences of prolonged fattening were less expressed in heifers than in bulls.
