Title:Analiza zasilnih zakolov v klavnici Rače v obdobju 2008 - 2009

Abstract:Cilj diplomske naloge je bil analizirati zasilne zakole klavnice Rače v obdobju 2008 – 2009. Klavnica Rače ima za potrebe rednih in zasilnih zakolov posebej prilagojeno linijo klanja. Na liniji klanja se vrši klanje vseh domačih živali razen perutnine. V ta namen smo naredili analizo klanja rednega zakola, pod drobnogled pa smo vzeli zasilne zakole, kateri se vršijo na območju Podravske, Pomurske, Koroške in Savinjske regije. Ugotovili smo, da se je število rednih zakolov, analiziranem v obdobju 2008–2009, zmanjšalo iz 18594 na 16699 redno zaklanih živali. Povprečje rednega zakola v letih 2008–2009 se v ospredje postavlja redno zaklano govedo z 52,8 % in svinje z 45 %. Na osnovi dobljenih rezultatov zasilnega zakola pa ugotavljamo, da se je povečal iz 368 na 381 zaklanih živali. Ampak na osnovi števila vzrokov po kategorijah izločenih živali pa se je iz leta 2008 v 2009 zmanjšalo število zasilnih zakolov pri vseh analiziranih kategorijah razen, pri bikih, pri katerih se je zasilni zakol povečal za 11,4 %. Analizirali smo vzroke zasilno zaklanih živali. Te smo razdelili na poškodbe nog, ostale poškodbe, porodne vzroke, prebavne vzroke in ostalo (kap, bule …). Pri tem smo ugotovili, da prevladujejo poškodbe nog, povprečno v preučevanem obdobju zajemajo 55,6 %, ospredju so pri vseh kategorijah preučevanih živali. Razen pri kravah, kjer so nekoliko povečani porodni vzroki. Preučili smo tudi zasilno klanje, ki se vrši na domu ob prisotnosti in dovoljenju veterinarja. Zakol na domu se je povečal iz 288 živali (v letu 2008) na 340 zasilno zaklanih živali (v letu 2009). Kar pomeni, da se je klanje živo pripeljanih živali v klavnici zmanjšalo. S tem ugotavljamo, da so se ekonomske izgube zmanjšale, saj nadalje ugotavljamo, da je bilo od vseh zasilno zaklanih živali, večinoma meso uporabno za prehrano ljudi. To potrdi uspešno ekonomično delovanje klavnice. Pri statistični obdelavi podatkov smo ugotovili statistično neznačilno razliko med obravnavanimi vzroki zasilnega zakola. Pri kategoriji bikov na povečano pogostost izločitev v letu 2009 v primerjavi z letom 2008 smo ugotovili statistično značilno razliko (p ≤ 0,05) . V pogostosti zasilnih zakolov med letoma 2008 in 2009 je bila ugotovljena statistično značilna razlika (p ≤ 0,05) pri kategoriji telic.

Title:Analysis of emergency slaughters in slaughterhouse Rače in the period 2008 – 2009
Abstract:The aim of this study was to analyze emergency slaughter in the slaughterhouse Rače in the period 2008 – 2009. The slaughterhouse Rače has an especially adapted slaughter line for the needs of regular and emergency slaughters. The slaughter line is made for slaughtering all domestic animals except poultry. To this end, we made an analysis of the regular slaughter, under the microscope we take emergency slaughter, which are made in the area Podravska, Pomurska, Koroška and Savinjska region. We have found out that the number of regular slaughtering in the analysis period 2008 – 2009 fell from 18,594 to 16,699 regularly slaughtered animals. The average of the regular slaughter in 2008 – 2009 in the front line regularly slaughtered cattle by 52,8 % and swine with 45 %. Based on the results of emergency slaughter we have found out that number of slaughtered animals increased from 368 to 381. But based on the number of sources by category culled animals it was from 2008 to 2009 decreased in all categories analyzed animals except for the bulls to the emergency slaughter increased by 11,4 %. We analyzed the causes of emergency slaughtered animals. These are divided into leg injury, other injuries, birth causes, digestive and other causes (stroke, bumps ...) In doing so, we found out that the predominant leg injury, averaged over the analyst period include 55,6 % forefront in all categories of studied animals, except for cows, which are slightly increased in obstetric disorders. We have examined the emergency slaughter, which is done at home in the presence of a licensed veterinarian. Slaughter to the home in 2008 increased from 288 animals in 2009 to 340 emergency slaughtered animals. It means that the slaughtering of live animals brought into slaughter decreased. We can conclude that the economic losses have been reduced and that most of the meat from all of the emergency slaughtered animals is used for human consumption. This confirms the successful economical operation of slaughterhouses. From statistical data analysis, we have found out that there is statistically non significant difference between treatments causes of emergency slaughter. In the case of bulls at an increased rate of culling in 2009 compared to 2008, there is a statistically significant difference (p ≤ 0.05). As for the frequency of emergency slaughters between 2008 and 2009 there is a statistically significant difference (p ≤ 0.05) in the category of heifers.
