Abstract:
V letu 2008 smo v Sadjarskem centru Maribor – Gačnik spremljali nekatere parametre zrelosti in kakovosti sliv (Prunus domestica L.) sort ´Hanita´ in ´Stanley´v času zorenja. Namen poskusa je bil ugotoviti optimalni čas obiranja v naših pedoklimatskih razmerah ter povezavo med obarvanostjo plodov (parametri L* a* in b*) in posameznimi parametri zrelosti (trdoto mesa plodov, vsebnostjo skupnih titracijskih kislin, topno suho snov in razmerje med topno suho snovjo in titracijskimi kislinami). Rezultati so pokazali, da barva povrhnjice ni dober pokazatelj zrelosti in s tem optimalnega časa obiranja. Sorta ´Hanita´ razvije intenzivno modro barvo 10 dni in sorta ´Stanley´ 14 dni pred užitno zrelostjo. Sorta ´Hanita´ tvori v naših pedoklimatskih razmerah tudi več topne suhe snovi in skupnih titracijskih kislin. Povezava med zunanjimi in notranjimi parametri zrelosti in kakovosti je močnejša pri sorti ´Stanley´, predvsem med parametrom barve b* ter skupnimi titracijskimi kislinami.

Dynamics of changes in the ripeness and quality parameters during ripening varieties of plums ´Stanley´ and ´Hanita´
Abstract:
In 2008 in the fruit farming centre Maribor – Gačnik we were establishing the development of some ripeness parameters of the varieties of plums 'Hanita' and 'Stanley'. The purpose of the experiment was to determine the optimal harvest time in our soil and weather conditions and the connection between coloration of fruits (parameters L* a* and b*) and various parameters of ripeness (hardness of the fruit flesh, amount of total titratable acidity, soluble solids and the relationship between soluble solids and titratable acidity). The results showed that the colour of the skin is not a good indicator of ripeness and optimal harvest time. It turned out that the variety of plums 'Hanita' develops intensive blue colour ten days and 'Stanley' two weeks prior to edible ripeness of plums. In our soil and weather conditions the variety of plums 'Hanita' creates more soluble solids and total titratable acidity. The connection between outer and inner parameters of ripeness and quality is stronger in the variety of plums 'Stanley', especially the connection between the parameter colour b* and drop in the total titratable acidity.
