Title:Izbira sistema sledenja v podjetju Ledas d.o.o. z uporabo večparametrskega modela odločanja

Abstract:Kupec 21. stoletja je ozaveščen o zdravi in varni hrani ter ravno zaradi njegove varnosti se zahteva, da mesna industrija vodi sledljivost svežega mesa. Osnovni namen sledljivosti je zmanjševanje stroškov in dela pri izsledovanju živil, ki so jih oddali na trg v primeru krize v prehrambeni industriji (umik, odpoklic). Zakonodaja nam ne veleva, kako naj vodimo sledljivost, temveč nam le nalaga, da smo kot izvajalci te dejavnosti kadarkoli sposobni določiti dobavitelje svežega mesa oziroma naše kupce. Sledljivost je moč voditi preko sistema HACCP in na takšen način vodijo sledljivost tudi v podjetju Ledas, d. o. o. Takšno sledenje zadostuje svojemu namenu, vendar ima tudi pomanjkljivosti, ki je moč odpraviti le z informatizacijo sistema sledenja. Ne glede na to, kakšno vrsto sledenja uporablja podjetje, mora biti to sledenje preprosto za uporabo, v skladu s pravili, stroškovno učinkovito, usmerjeno v rezultate, preverljivo, dosledno in objektivno. V diplomski nalogi analiziramo obstoječi sistem in ga kritično ovrednotimo, oblikujemo večparametrski model odločanja ter anketiramo ponudnike, da pridobimo žaljene podatke. Ta model odločanja nam bo služil le kot pomoč, navsezadnje je končna odločitev še vedno odvisna od nosilca odločitve.

Title:The selection of traceability system in company Ledas d.o.o. with the use of multi-atribute model making
Abstract:21st century customers are conscious about health and food safety and precisely because of the safety, it is required from the meat industry to keep traceability of fresh meat and its products. The main purpose of traceability system is to reduce costs and work in tracing down the food, which was delivered to the market if there is a crisis in the food industry (withdrawal, recall). The legislation does not dictate how we run traceability, but it only requires from us that, we as manufacturers from such activities are able to, at any time, recognize our suppliers and our customers. Traceability can be run through HACCP system and this is how company Ledas, d. o. o., runs its traceability system. This way of traceability is sufficient for its function, but it has flaws, which could be resolved only by the computerization of the tracking system. No matter what kind of traceability system we use in a company, it must be easy to use, in accordance with the legislation, cost – effective, result – based, verifiable, consistent and objective. In this thesis we analyzed the existing system and critically evaluated it, then we designed a multi – attribute decision model and we interviewed providers to collect data that we need. This model will serve only as an aid in decision making and ultimately the final decision still depends on the chairman of the company.
