Title:PORAZDELITEV CINKA, BAKRA, ŽELEZA, MANGANA IN KADMIJA ZNOTRAJ KORMUSOV TARA (Colocasia esculenta) IN NJIHOV VPLIV NA PREHRANSKO VREDNOST

Abstract:Taro (Colocasia esculenta) je tropska gomoljevka/korenovka, katere bogata hranilna sestava predstavlja pomemben vir človeške prehrane milijonom ljudem. V sklopu mednarodnega projekta INEA (The International Network for Edible Aroids) smo analizirali porazdelitev Zn, Cu, Fe, Mn in potencialno toksičnega Cd v različnih delih kormusov tara (zgornji, spodnji, marginalni in centralni) in izračunali njihov doprinos k dnevnim potrebam. Po kislinskem razklopu vzorcev smo koncentracije Zn določili s plamensko atomsko absorpcijsko spektroskopijo (FAAS), koncentracije Cu, Mn, Fe ter Cd pa z elektrotermično atomsko absorpcijsko spektroskopijo (ETAAS). Najvišje vsebnosti vseh analiziranih elementov so bile v zgornjem delu kormusa: 55,59 ± 11,2 mg Zn/kg SS, 13,56 ± 1,79 mg Fe/kg SS, 8,00 ± 0,67 mg Cu/kg SS, 12,72 ± 1,56 mg Mn/kg SS, 0,090 ± 0,019 mg Cd/kg SS. Visoke vsebnosti vseh analiziranih elementov, razen Mn, smo izmerili tudi v centralnem delu kormusa, medtem ko je marginalni del bogat z Zn (59,05 ± 12,27 mg/kg SS) in Mn (11,71 ± 1,46 mg/kg SS). V spodnjem delu kormusa so bile koncentracije vseh analiziranih elementov najnižje. Z vidika prehranske vrednosti smo ugotovili, da je taro pomemben vir Zn, Mn in Cu, medtem ko so koncentracije Fe bistveno prenizke za doseganje priporočenih dnevnih vnosov. Kormusi tara vsebujejo tudi precej toksičnega Cd (0,0780 ± 0,008 mg/kg SS).

Title:DISTRIBUTION OF ZINC, COPPER, IRON, MANGANESE AND CADMIUM IN TARO (Colocasia esculenta) CORMS AND THEIR IMPACT ON THE NUTRITIONAL VALUE
Abstract:Taro (Colocasia esculenta) is a tropical root crop, whose rich nutritional composition is an important source of human nutrition for millions of people. Within the framework of the international project INEA (The International Network for Edible Aroids), we analyzed the distribution of Zn, Cu, Fe, Mn and potentially toxic Cd in different parts of taro corms (upper, lower, marginal and central) and calculated their contribution to the daily mineral intake. After the microwave-assisted acidic digestion of samples, the concentrations of Zn were determined by flame atomic absorption spectroscopy, whereas the concentrations of Cu, Mn, Fe and Cd were determined by electrothermal atomic absorption spectroscopy (ETAAS). The upper part of corm contained the highest levels of all investigated elements (55.59 ± 11.2 mg Zn/kg DM, 13.56 ± 1.79 mg Fe/kg MD, 8.00 ± 0.67 mg Cu/kg DM, 12.72 ± 1.56 mg Mn/kg DM, 0.090 ± 0.019 mg Cd/kg DM. High levels of all investigated elements, with the exception of Mn, were also determined in the central part, whereas the marginal part was rich in Zn (59.05 ± 12.27 mg/kg DM) and Mn (11.71 ± 1.46 mg/kg DM). The lower part contained the lowest concentrations of all investigated elements. In terms of nutritional value, we found that taro is an important source of Zn, Mn and Cu, however, the concentrations of Fe were too low to achieve the recommended daily intakes. Taro corms also contained significant amounts of toxic Cd (0.0780 ± 0.008 mg/kg DM).
