Title:Spremljanje vsebnosti polikloriranih bifenolov v živilih z oceno vnosa

Abstract:Poliklorirani bifenili (PCB) spadajo v skupino sintetičnih organoklornih spojin, ki se akumulirajo v okolju. Že desetletja je znano, da poliklorirani bifenili (PCB) preko onesnaženega okolja prehajajo v človeško prehranjevalno verigo. Kopičijo se v maščobnem tkivu in odvisno od količin ter časa izpostavljenosti povzročajo različne zdravstvene zaplete. V magistrskem delu smo pregledali podatke o vsebnosti PCB v določenih živilih na osnovi monitoringa, ki ga je v letih 2012–2014 izvedla Uprava RS za varno hrano, veterinarstvo in varstvo ratslin. Analizirana so bila 103 različna živila, ki so jih testirali na prisotnost 18 različnih PCB in vsoto 6 indikatorskih PCB. V 98 % so bili odvzeti vzorci živalskega izvora, kjer se PCB tudi najpogosteje kopičijo. Z osnovno statistično analizo smo opisali porazdelitev vrednosti vsote 6 indikatorskih PCB v posameznih kategorijah živil in jih primerjali z mejnimi vrednostmi UREDBE KOMISIJE (ES) št. 1881/2006 o določitvi mejnih vrednosti nekaterih onesnaževal v živilih. Ugotovili smo, da so bili vsi odvzeti vzorci pod najvišjo dovoljeno mejno vrednostjo. Vnos PCB s hrano smo ocenili na podlagi enostavnega točkovnega modela za vnos kemikalij in za to uporabili povprečne vrednosti vsote šestih indikatorskih PCB v posamezni kategoriji živil ter zaužite količine te kategorije živil pri prebivalcih Slovenije. Za oceno zaužitih količin živil smo uporabili podatke ankete o porabi živil v gospodinjstvih (APG) za leto 2012, ki smo jih pridobili od Nacionalnega inštituta za javno zdravje. Glede na podatke APG smo izračunali, da največ PCB vnašamo v naš organizem z drugimi živalskimi maščobami in z uživanjem rib, najmanj pa z jetri. Najvišje izmerjena koncentracija iskanih PCB je bila najdena v ribah, najnižja pa v margarini in drugih rastlinskih maščobah.

Title:Monitoring the levels of polychlorinated biphenyl’s in foods and assessment of the intake
Abstract:Polychlorinated biphenyls (PCBs) belong to a group of synthetic organochlorine compounds that accumulate in the environment. It has been known for decades that polychlorinated biphenyls (PCBs) enter the human food chain through environmental pollution. They accumulate in the fatty tissue and, depending on the amounts and the time of exposure, cause various health problems. In this master's thesis, we have examined the data of the PCB content in certain foods through monitoring, which was conducted by UVHVVR between 2012 and 2014. We analysed 103 different foods that had been tested for 18 different PCBs and the sum of 6 indicator PCBs. The 98 % of samples were of animal origin, where the PCBs in fact most frequently accumulate. Through basic statistical analysis we examined the distribution of values of specific PCBs in certain food categories and compared them to the limit values of the COMMISSION REGULATION (EC) No. 1881/2006 on setting the maximum levels for certain contaminants in foodstuffs. We found that all samples that had been taken, were below the maximum permitted limit value. The PCB intake through food was assessed on the basis of a simple point model for chemical inputs, using the average values of the sum of six indicator PCBs in each category of foods and consumed quantity of this particular category of foods in the inhabitants of Slovenia. In order to evaluate the consumed quantities of food, we used the data of the Household Consumption Survey (HCS) for 2012, which we had obtained from the National Institute of Public Health. Based on the HCS data, we calculated that most PCBs enter our body by consuming other animal fats and fish, and the least through liver. The highest measured concentration of PCBs was found in fishes, and the lowest in margarine and other vegetable fats.
