Title:Izplen tofuja iz dveh sort soje pridelane v različnih pridelovalnih sistemih

Abstract:Tofu ali sojin sir nastane s sesirjenjem sojinega mleka ob dodatku primernega sirila. V okviru magistrskega dela smo vrednotili koeficient vpijanja vode, ki jo je soja absorbirala v času namakanja, izplen okare in sojinega mleka, volumen sojine sirotke ter izplen tofuja po 20' in 24 h obtežitve. Za namen raziskave smo uporabili seme dveh sort soje ('ES Mentor' in 'Aligator'), požete v letu 2016 v trajnostnem poskusu, ki z namenom proučevanja pridelovalnih sistemov na UKC Pohorski dvor poteka že od leta 2007. Sorti sta bili pridelani v naslednjih pridelovalnih sistemih: ekološki (EKO), biodinamični (BD), integrirani (IPL), konvencionalni (KON) in v obravnavanju kontrola (K). Rezultati analize kažejo, da pridelovalni sistem značilno vpliva na izplen tofuja, vrednotenega po 24 urah obtežitve. Največji izplen je dosežen pri EKO (2,07) in BD (2,04). Razlike so se pokazale tudi med sortama, kjer je izplen tofuja značilno večji pri 'ES Mentor' (2,04) v primerjavi s sorto 'Aligator' (1,95). V sklopu magistrskega dela smo dobljene rezultate primerjali še z rezultati podobne raziskave iz leta 2014. Rezultati analize podatkov v obeh letih pridelane soje kažejo značilno večji izplen tofuja v letu 2016 pridelane soje, razlik med pridelovalnimi sistemi pa ni. Prav tako ni značilnih razlik med izplenom tofuja obeh sort ('ES Mentor' 2,18 in sorte 'Aligator' 2,15). Zaključimo lahko, da sta pridelovalni sistem EKO in sorta 'ES Mentor' primerna izbira za uspešno pridelavo soje in kasnejšo predelavo v tofu.

Title:Tofu Yield of two Soybean Varieties Produced in Different Production Systems
Abstract:Tofu or soy cheese is made of soymilk using a suitable coagulant. Within the master's thesis we evaluated the effect on water uptake factor by soybeans upon soaking, the yield of okara and soybean milk, the volume of soybean whey and the yield of tofu of 20' and 24 h pressing. Soybean seeds of two different varieties ('ES Mentor' and 'Aligator') were used in the study, produced in 2016 in a long-term field trial carried out at the UKC Pohorski dvor since 2007. Varieties were produced in different production systems: organic (EKO), biodynamic (BD), integrated (IPL), conventional (KON) and treatment control (K). The results of the analysis show, that the production system had a significant influence on the tofu yield evaluated after 24 hours of pressing. The highest tofu yield was achieved from EKO (2,07) and BD (2,04) soybeans. The differences between varieties were also observed in the yield of tofu, as it was significantly higher from the 'ES Mentor' (2.04) compared to the 'Aligator' variety (1.95). The results obtained from 2016 crops were compared with the results of a similar research from 2014. The analysis showed a significantly higher tofu yield from soybeans produced in 2016, but there were no differences between the production systems. In 2014 there were also no significant differences between the tofu yields from both varieties ('ES Mentor' 2.18 and 'Aligator' 2.15). We can conclude that EKO production system and the variety 'ES Mentor' are appropriate choice for the successful production of soybeans and further processing into tofu.
