Title:Fenolne in lipidne komponente v ekstraktu kave z različnim geografskim poreklom : diplomsko delo univerzitetnega študijskega programa I. stopnje

Abstract:Kava, ki izvira iz Arabije, kjer se je imenovala “qawah”, predstavlja glavni proizvod iz kavnih zrn in je ena najbolj priljubljenih pijač na svetu. Vsebuje več kot 700 spojin, ki so odgovorne za njen aromatičen okus, glavna med njimi je kofein. Rod Coffea Arabica in Coffea Cahephora var. Robusta sta najpomembnejši vrsti kave. Tako Robusto kot Arabico najdemo v različnih državah na območjih Južne Amerike, Afrike in Azije, vendar ima Arabica višjo kakovost in obsega večinski delež izvoza kave. Kava ima visoko hranilno kakovost, kar se kaže v visoki vsebnosti antioksidantov. V diplomskem delu smo raziskali vpliv geografskega porekla kave na fenolne in lipidne komponente v kavi ter določili antioksidativno aktivnost kave. Ekstrahirali smo 15 različnih vrst kave in ekstraktom spektrofotometično določili vsebnost skupnih fenolov in antioksidativno aktivnost. Z kromatografskimi metodami smo določili vsebnost hlapnih komponent v kavi z GC-MS metodo in vsebnost fenolnih ter maščobnih spojin z LC-MS/MS metodo. Med fenolnimi spojinmi smo določevali vebnost kavne kisline, kofeina in klorogenske kisline. Klorogenske kisline, katere glavni predstavnik je 5-kafeoilkininska kislina, imajo številne zdrave učinke. Največji delež kofeina smo zaznali pri vzorcu 100 % Robuste.

Title:Phenolic and lipid components in coffee extract of different geographical origin
Abstract:Coffee, that originates from Arabia, where it was called “qawah”, represents the main product from coffee grains and is one of the most loved beverages in the world. It contains more than 700 compounds, which are responsible for its aromatic flavour. The main compound is caffeine. Genus Coffea Arabica and Coffea Canephora var. Robusta are the uppermost sorts of coffee. Both Robusta and Arabica can be found in various countries in South America, Africa and Asia, but Arabica has higher quality and covers the major share in the export of coffee. Coffee has high nutritional value and content of antioxidants. In our diploma work we researched the effect of geographical origin of coffee on phenol and lipid components inside coffee and as well specified the antioxidant activity of coffee. We have extracted 15 varieties of coffee and have defined the content of common fenols and antioxidant activity in the extracts with a spectophotometric method. With cromatographic methods we have determined the content of vapour components in coffee with a GC-MS method and as well the content of coffee acid with a LC-MS/MS method. Amongst the fenol compounds we were specifying the content of coffee acid, cafein and chlorogenic acid. Chlorogenic acids, whose main representative is 5-caffeoylquinic acid, have numerous helthy effects. The biggest share of cofeine was detected in the sample of 100% Robusta.
