Abstract:V magistrskem delu je bil preučevan učinek ekstraktov bezgovih jagod Sambucus nigra in jagod različnih medvrstnih križancev, ki so obsegali različne kombinacije S. javanica s S. nigra, S. cerulea in/ali S. racemosa, na dva pomembna prehranska patogena, to sta Salmonella typhimurium in Staphylococcus aureus.

Title:Elderberry extracts and their potential to inhibit microbes
Abstract:The thesis is associated with the investigation of the effect of berry extracts of Sambucus nigra and various interspecific combinations involving S. javanica with S. nigra, S. cerulea and/or S. racemosa against two important food pathogens Salmonella typhimurium and Staphylococcus aureus. Bacterial growth was monitored in media containing elderberry extracts. Although the growth of bacteria was altered in the presence of elderberry extracts, the minimum inhibitory concentration could not be determined. It was discovered that the addition of elderberry extracts in higher concentrations accelerated the growth of S. typhimurium and S. aureus, while at low concentrations the effect on the increased growth of the bacteria was not observed. The maximum bacterial growth rate in the presence of most elderberry extracts was measured in the presence of 5 mg/mL extract concentration. The concentration of bacteria reached after 24 hours, in the presence of 5 mg/mL extract, was also the highest in most cases. The highest concentration of S. typhimurium after 24 hours and the maximum growth rate of bacteria was reached in the presence of elderberry extracts JA × RAC, JA × KOR and JA × NI. The lowest maximum growth rate was measured with the addition of elderberry extract JA × (JA × NI). At S. aureus, the highest concentration after 24 hours was achieved with the addition of elderberry extracts S. nigra 'Black Beauty' and (JANI × CER) × MIQ. The highest maximum growth rate of S. aureus was detected with the addition of JA × KOR and hybrid (JA × CER) × (JA × NI). The lowest maximum growth rate was measured with the addition of elderberry extract JA Addis Abeba.
