Title:Cianogeni glikozidi v slivah (Prunus domestica L.) in njihovih proizvodih : magistrsko delo

Abstract:Cianogeni glikozidi so sekundarni metaboliti, ki se nahajajo v rastlinah, v katerih je bilo do sedaj identificiranih 112 spojin. Pomembni so z vidika obrambe rastlin, saj se pri poškodbi rastlinskih tkiv pod vplivom β-glukozidaze spremenijo v toksičen vodikov cianid, ki je nevaren tudi za človekovo zdravje. Postavlja se vprašanje o varnosti cianogenih živil, saj bi potencialno z uživanjem velikih količin lahko prišlo do preobremenitve telesa s cianovodikovo kislino. Vsebina naloge temelji na rezultatih raziskav, ki so bile opravljene o cianogenih glikozidih v slivah (Prunus domestica L.) in njihovih proizvodih. Ker gre za nalogo preglednega tipa, je bila uporabljena metoda dela pregled obstoječe novejše literature in raziskav na omenjeno temo. Ugotovili smo, da slive vsebujejo cianogena glikozida prunasin in amigdalin, pri čemer prednjači slednji. Največja vsebnost cianogenih glikozidov je v koščicah, medtem ko jih v mesu ploda skoraj ni zaznati. S procesiranjem (namakanje, sušenje, fermentacija, ipd.) se delež amigdalina zmanjšuje, vendar ga nekaj v končnem proizvodu vseeno ostane. Ta vrednost je praviloma sicer pod mejo škodljivosti, se pa meja lahko hitro prekorači predvsem pri nepravilnem postopku žganjekuhe, natančneje pri nepravilni pripravi drozge iz koščičastega sadja.

Title:Cyanogenic Glycosides in Plums (Prunus domestica L.) and Their Products
Abstract:Cyanogenic glycosides are secondary metabolites found in plants. To date, 112 compounds have been identified in plants. They are very important for plant defence. When damaged, plant parts convert tcyanogenic glycosides in the presence of β-glucosidase into toxic hydrogen cyanide, which is also dangerous for human health. The question of the safety of cyanogenic foods arises as consumption of large quantities could potentially overload the body with hydrogen cyanide. This master thesis is based on the results of studies on cyanogenic glycosides in plums (Prunus domestica L.) and their products. Since this is a review-type task, the method used was a review of the existing recent literature and research on the mentioned topic. We found that plums contain the cyanogenic glycosides prunasin and amygdalin. The highest content of cyanogenic glycosides is in the seeds, while they are almost absent in the mesocarp. Processing (soaking, drying, fermenting, etc.), decreases the content of amygdalin, but a certain amount remains in the final product. Usually the value is below the harmful limit, which can, however, be quickly exceeded, especially in the case of improper spirit production, more specifically if the mash stone fruit is not prepared correctly.
