Title:Aditivi v izdelkih iz prodajnih avtomatov v zdravstvenih in socialno varstvenih zavodih : magistrsko delo

Abstract:Prodajni avtomati predstavljajo zelo priročno možnost za nakup hrane za ljudi v tem hitrem tempu življenja. V njih največkrat najdemo predpakirana živila in pijače, ki imajo dolgi rok trajanja. Ta učinke se doseže z uporabo različni aditivov. Aditivi so dodane snovi živilom, ki jih običajno ne najdemo v tipični sestavi živila. Aditivi so razvrščeni v funkcijske razrede, kot so emulgatorji, stabilizatorji, barvila, konzervansi, sredstva za uravnavanje kislosti, antioksidanti in kisline. V magistrskem delu smo preverjali vsebnost aditivov v izdelkih iz prodajnih avtomatov v zdravstvenih in socialno varstvenih zavodih v Sloveniji in ugotovili, da so največkrat uporabljeni aditivi v sendvičih, žvečilnih gumijih, energijskih žitnih ploščicah in določenih sladoledih. Največkrat so bili uporabljeni emulgatorji/stabilizatorji/gostila (27,6%). Raziskava je pokazala, da je 44,19% vseh izdelkov vsebovalo več kot 4 različne aditive. Prav tako so rezultati pokazali, da proizvajalci največkrat uporabljajo označevanja aditivov v živilih z specifični imeni (75,14%) in ne z oznako E-števila. Med vsemi popisanimi aditivi nismo zasledili aditiva, ki bi bil zdravju škodljiv. Menimo, da je večji problem v medsebojnem učinkovanju aditivov v določenih izdelkih, saj smo v nekaterih izdelkih popisali po več kot 10 različnih aditivov.

Title:Additives in vending machine products at health and nursing care institutions in slovenia
Abstract:Vending machines provide a very convenient opportunity to buy food for people with a busy lifestyle. They most commonly sell pre-packaged food and beverages with a long shelf-life. These effects can be achieved using different additives. Additives are substances added to food, but not usually a part of the typical food composition. They are classified into functional grades, such as emulsifiers, stabilisers, colourants, preservatives, acidity regulators, antioxidants and acids. In this master's thesis, we studied the content of additives in vending machine products at healthcare and social care institutions in Slovenia, determining that they are most commonly used in sandwiches, chewing gums, energy cereal bars and certain brands of ice-cream. The most prevalent were emulsifiers/stabilisers/thickeners (27.6%). The research showed that 44.19% of all products contained more than four different additives. Moreover, the results showed that producers most commonly label additives in food with specific names (75.14%) and not using the E number. Among all additives recorded, we were not able to identify a single additive harmful to our health. However, we believe that the interaction of additives in certain products is more concerning, given that more than ten different additives were recorded in certain products.
