Title:Določevanje parametrov kakovosti vina s Fourierovo Transformacijsko Infrardečo Spektroskopijo (FTIR) : diplomsko delo visokošolskega strokovnega študijskega programa I. stopnje

Abstract:Namen naloge je bila vpeljava novega postopka merjenja izbranih parametrov v vinu. Parametre smo določevali na aparatu LYZA 5000 Wine, ki temelji na Fourierovi Transformacijski Infrardeči Spektroskopiji (FTIR). Izbrani parametri, ki smo jih v poskusu merili so alkohol, relativna gostota, kisline, pH, hlapne kisline, ekstrakt ter glukoza in fruktoza. Ustvarili smo model, ki je vseboval različne vzorce vina. V okviru delne validacije smo preverili ponovljivost in obnovljivost. Glavni cilj je bil preučiti možnost zamenjave več metod, ki se trenutno izvajajo na različnih napravah, z eno metodo, ki bi omogočala analizo več parametrov na eni sami napravi. Prednosti bi bile prihranek časa, energije, denarja in materiala. Parametre smo statistično ovrednotili glede na zahteve v skladu z validacijskim postopkom. Rezultati ponovljivosti in obnovljivosti so sprejemljivi za glukozo in fruktozo, kisline, pH, ekstrakt, hlapne kisline in relativno gostoto in so znotraj predpisanega kriterija. Paralelne meritve medlaboratorijskih primerjav so izven predpisanih meja. Potrdili smo, da izbrana analizna metoda zagotavlja točnost za naslednje parametre: alkohol, pH, ekstrakt, kisline, relativna gostota, glukoza in fruktoza.

Title:Determination of wine quality parameters with Fourier Transform Infrared Spectroscopy (FTIR)
Abstract:The aim of the thesis was to introduce a new procedure for measuring selected parameters in wine. The parameters were determined on the LYZA 5000 Wine apparatus, which is based on Fourier Transform Infrared Spectroscopy (FTIR). The selected parameters that were measured in the experiment are alcohol, relative density, acids, pH, volatile acids, extract and glucose and fructose. We created a model that contained different samples of wine. As part of partial validation, we checked repeatability and reproducibility. The main goal was to study the possibility of replacing several methods, which are currently performed on different devices, with one method that would allow the analysis of several parameters on a single device. The advantages would be saving time, energy, money and materials. The parameters were statistically evaluated according to the requirements in accordance with the validation procedure. Repeatability and reproducibility results are acceptable for glucose and fructose, acids, pH, extract, volatile acids and relative density and are within the prescribed criteria. Parallel measurements of interlaboratory comparisons are outside the prescribed limits. We confirmed that the chosen analytical method provides accuracy for the following parameters: alcohol, pH, extract, acids, relative density, glucose and fructose.
