Title:Priporočila za zmanjševanje ogljičnega odtisa in prilagajanje prehranskih sistemov podnebnim spremembam

Abstract:Odločitve o naši vsakdanji prehrani, tako doma kot na turističnem potovanju, imajo pomemben vpliv na globalne spremembe podnebja. Različne študije kažejo, da celotni prehranski sistem na planetarni ravni prispeva med 26 % in 30 % antropogenih izpustov toplogrednih plinov. Turizem se je skupaj z gastronomskim turizmom dokazal kot izjemno pomemben partner na področju trajnostnega razvoja in naslavljanja podnebnih sprememb. V študiji smo raziskovali, kako je gastronomski turizem udeležen v skupnem ogljičnem odtisu turizma. Namen raziskovanja je bil mapirati stanje na področju prilagajanja gastronomije podnebnim spremembam in njihovega blaženja ter opredeliti relevantne vidike, multidisciplinarne pristope in zarisati polje raziskovanja. Analizirali smo obstoječe raziskave in primere dobrih praks, v empiričnem delu pa izvedli fokusne skupine in poglobljene intervjuje z različnimi strokovnjaki na področju kmetijstva in turizma, predstavniki institucij, odgovornih za oblikovanje kmetijskih in turističnih politik ter ponudniki v gastronomski turistični verigi. V zaključnem delu raziskave smo analizirali obstoječe politike na področju turizma in jih vzporedili z ugotovitvami iz empiričnega dela ter oblikovali priporočila za nadaljnje ukrepe na področju gastronomskega turizma v Sloveniji. Pomemben prispevek naše raziskave predstavlja tudi identifikacija mankov znanj, potrebnih v različnih sektorjih, ki vplivajo na stanje in razvoj gastronomskega turizma, in opredelitev potencialnih področij raziskovanja.

Title:Recommendations for reducing carbon footprint of Slovenian gastronomy and adapting food systems to climate change
Abstract:Decisions about our daily diet, both at home and while traveling, significantly impact global climate change. Tourism, along with gastronomic tourism, has proven to be an extremely important partner in the field of sustainable development and addressing climate change. In our study, we investigated how gastronomic tourism is involved in the overall carbon footprint of tourism. The research aimed to map the state of adaptation of gastronomy to climate change and its mitigation, as well as to identify relevant aspects and multidisciplinary approaches and outline the field of research. We conducted focus groups and in-depth interviews with various experts in agriculture and tourism, representatives of institutions responsible for shaping agricultural and tourism policies, and providers in the gastronomic tourism chain. In the final part of the research, we analysed existing tourism policies, compared them with the findings from the empirical part, and formulated recommendations for further actions in the field of gastronomic tourism in Slovenia. A significant contribution of our research also lies in identifying gaps in knowledge needed in various sectors that affect the state and development of gastronomic tourism and defining potential areas for research.
