Title:Primerjava senzoričnih in kemičnih lastnosti jagod (Fragaria x ananassa Duch.) sorte ‘Dely’ pridelane v zemlji in hidroponiki : diplomsko delo

Abstract:V diplomskem delu smo primerjali kemične in senzorične lastnosti plodov jagod sorte ’Dely’, pridelanih v zemlji in hidroponiki. Plodove smo dobili na dveh kmetijah, kjer na eni jagode pridelujejo na ekološki način, na drugi pa v hidroponiki. Jagode smo obrali v tehnološki zrelosti, pripeljali na Fakulteto za kmetijstvo in biosistemske vede, kjer smo isti dan izvedli kemično analizo plodov (masa, barva, trdota, topne suhe snovi, kisline, pH) in senzorično oceno plodov (velikost, barva, oblika, vonj, čvrstost, sladkost, okus, skupni vtis). Rezultati so pokazali, da so bile jagode, pridelane v zemlji, v povprečju nekoliko večje, čvrstejše, vsebovale so več sladkorja in kislin. Senzorično ocenjevanje plodov je pokazalo, da so jagode, pridelane v zemlji imele statistično značilno sprejemljivejšo obliko kot jagode, pridelane v hidroponiki. To razliko so zaznale pokuševalke, medtem ko razlike med pokuševalci nismo ocenili kot statistično značilne. Tudi starost pokuševalcev je imela vpliv na senzorično oceno plodov, kjer so mlajši pokuševalci statistično značilno bolje ocenili obliko plodov, pridelanih v zemlji, medtem ko te razlike pri starejših pokuševalcih ni bilo.

Title:Comparison of Sensory and Chemical ’Dely’ Strawberry (Fragaria x ananassa Duch.) Properties Grown in Soil and Hydroponically
Abstract:In the diploma thesis, we compared the chemical and sensory properties of strawberry fruits of the cultivar ‘Dely’, grown in soil and in hydroponics. The fruits were obtained from two farms, where on one farm strawberries are produced in an organic way, and on the other in hydroponics. The strawberries were harvested at technological maturity, transported to the Faculty of Agriculture and Life Sciences, where on the same day we carried out the chemical analysis of the fruits (weight, colour, firmness, soluble solids, acids, pH) and the sensory evaluation of the fruits (size, colour, shape, aroma, firmness, sweetness, taste, overall impression). The results showed that strawberries grown in soil were, on average, slightly larger, firmer, and contained more sugars and acids. Sensory evaluation of the fruits showed that strawberries grown in soil had a statistically significantly more acceptable shape than strawberries grown in hydroponics. This difference was detected by female panelists, while the difference among male panelists was not evaluated as statistically significant. The age of the panelists also had an influence on the sensory evaluation of the fruits, where younger panelists statistically significantly rated the shape of fruits grown in soil better, while this difference was not observed among older panelists.
