Title:Računalniške simulacije interakcije sub- in superkritičnih fluidov z resveratrolom

Abstract:Ekstrakcijski postopki so že od nekdaj prisotni v živilski industriji, saj postopek ekstrakcije omogoča relativno hitro in lahko izolacijo komponent, ki imajo pozitiven vpliv in učinke na naš organizem. Danes dobivajo vedno večjo težo prehranska dopolnila, ki koristijo našemu zdravju in zavirajo razvoj bolezni. Zato smo si izbrali zanimivo in atraktivno naravno spojino resveratrol. S pomočjo Soxhletove ekstrakcije in ekstrakcije s hladnim topilom, ki smo ju izvajali z različnimi organskimi topili in superkritičnimi fluidi, smo pridobili ekstrakte iz različnih materialov, ki vsebujejo resveratrol. Pri tem smo tudi spremljali in ugotavljali, kako izbira topila vplivata na kvaliteto ekstrakta in na izkoristek. Izvedli smo še ekstrakcijo s superkritičnim CO2, kjer smo kot kotopilo uporabili etanol. Na koncu je sledila analiza pridobljenih vzorcev s spektrofotometrijo, kjer smo določali vsebnost totalnih fenolov, proanticianidinov in antioksidativno aktivnost, ki smo jo izražali kot odstotek inhibicije.

Title:Computer simulations of interactions of sub- and supercritical fluids with resveratrol
Abstract:Extraction processes have been present in the food industry for a longer time, because the process of extraction allows a relatively quick and easy isolation of components, which have a positive impact on our organism. At the present time food supplements, which benefit our health and inhibit the progression of various illnesses, have gained gretar significance. That is why we have chosen a scientifically interesting and attractive natural compound resveratrol. Using Soxhlet extraction and cold solvent extraction with various organic solvents and extraction with supercritical fluids, we have acquired extracts from various materials that contain resveratrol. The effect of a chosen solvent on the efficiency of the process and the quality of the obtained extract has been examined. Extraction with ethanol at elevated pressure has been performed. Finally we analysed the acquired samples using spectrophotometry to determine total phenolic content, concentration of proanthocyanidins and antioxidant activity, which we expressed as inhibition percentage.
