Abstract:	Teoretična izhodišča: Okužbe in zastrupitve, povzročene z živili, označujemo z izrazom alimentarne toksikoinfekcije. So pomembni vzrok obolevnosti in umrljivosti ljudi po vsem svetu. Predstavljajo finančno breme za podjetja in domove upokojencev, zato je naš namen predstaviti pogled in vlogo vodilnega vodstva na zagotavljanje varnosti živil. Metodologija: Uporabili smo kvantitativno metodo raziskovanja (anketna vprašalnika) in kvalitativno metodo (delno strukturirani intervju). V raziskavi so sodelovali vodilni v podjetjih in domovih upokojencev. Rezultati: Ugotovili smo, da vodilni v živilskem podjetju in domovih upokojencev vidijo zagotavljanje varnosti živil kot pomembno poslovno prioriteto (59 % podjetij in 41 % domov upokojencev se ni strinjalo s trditvijo, da varnost živil ni poslovna prioriteta) in vizijo podjetja oz. zavoda (23 % podjetij in 16 % domov upokojencev ima varnost živil opredeljeno v viziji podjetja oz. organizacije). Poleg vseh identificiranih prednosti in ovir pri zagotavljanju varnosti živil si želijo tudi večjo podporo države (60 % podjetij in 58 % domov upokojencev je mnenja, da bi veljavna slovenska zakonodaja na področju varnosti živil morala biti bolj prijazna oz. bolj prilagodljiva do podjetij oz. zavodov). Ugotovili smo tudi, da vodilni v podjetjih v primerjavi z vodilnimi v domovih upokojencev dajejo statistično pomembno prednost kakovosti izdelkov (p = 0,024). Diskusija in zaključek: Zagotavljanje varnosti živil je pomembna poslovna obveza, ki lahko poveže različne poglede na poslovanje podjetja oz. zavoda na vseh ravneh izvajanja delovnih procesov. S takšnim povezovanjem in mišljenjem zagotovimo varne in kakovostne izdelke ter zagotovimo večjo varnost potrošnikov, predvsem rizičnih skupin, kamor se uvrščajo starostniki.

Title:	The role of leadership in ensuring food safety
Abstract:	Theoretical background: Food-borne infections and intoxications are labelled with the term alimentary toxic infections. They are an important cause of morbidity and mortality all across the world. They also represent a financial burden for companies and retirement homes, therefore the aim is to present the view and the role of leading management in ensuring food safety. Methodology: We have used the quantitative research method (two questionnaires) and the qualitative method (semi-structured interview). The research included the leading management from companies and retirement homes. Results: We have determined that the leading management in food companies and retirement homes finds the ensuring of food safety an important business priority (58 % of companies and 41 % of retirement homes disagreed with the statement that food safety is not a business priority) and a vision of the company or the institution (23 % of companies and 16 % of retirement homes have food safety defined in the vision of their organization). Besides identified advantages and disadvantages in ensuring food safety, the leading management also strives for better national support (60 % of companies and 58 % of retirement homes feel that the existent Slovenian food safety legislation should be more user friendly or adaptable). We have also found that the leading management in companies gives a statistically important advantage to the quality of products (p = 0,024) rather than the leading management in retirement homes. Discussion and conclusion: Ensuring food safety is an important business responsibility, which can connect different views on company’s or institution’s management at all levels of implementing working processes. With such interconnection and mindset, we ensure safe and quality products as well as the greater safety of consumers, especially risk groups, which involve the elderly.
