Title:Analiza kulture varne hrane in razvoj spodbujevalcev v izbranem živilskem podjetju : magistrsko delo

Abstract:V magistrskem delu je bila obravnavana kultura varnosti hrane v izbranem živilskem podjetju ter proučevane možnosti njenega izboljšanja s pomočjo vedenjskih spodbujevalcev. Namen raziskave je bil ocenjevanje obstoječega stanja KVH ter preizkušanje učinkovitosti vedenjskih spodbujevalcev pri izboljševanju higienskih praks zaposlenih. Uporabljena je bila kombinacija kvantitativnih in kvalitativnih metod: izveden je bil anketni vprašalnik (n = 200), delno strukturirani intervjuji (n = 10) ter opazovanja vedenja zaposlenih v skupnem prostoru pred in po uvedbi spodbujevalcev želenega higienskega vedenja. Z analizo anketnega vprašalnika so bile ugotovljene visoke ocene kulture varnosti hrane (učinkovitost usposabljanj 4,6; zavedanje tveganj 4,5; obremenjenost na delovnem mestu 4,0; sredstva-viri-okolje 4,5; zavzetost zaposlenih 4,5; komunikacija 4,1; vodenje in podpora sodelavcev 4,2), vendar smo z intervjuji ugotovili vsebinske razlike med odgovori. Izpostavljeni so bili ključni izzivi, ki so pomembni za vodstvo (obremenjenost zaposlenih, komunikacijske težave, pomanjkanje zavzetosti zaposlenih, pomanjkanje priznanj, neenotno izvajanje pravil, prostorska stiska, zastareli spodbujevalci). Vodstvo je bilo ocenjeno kot strokovno in podporno, vendar zaradi preobremenjenosti pogosto premalo v stiku z zaposlenimi. Vizualni in zvočni spodbujevalci, zasnovani s pomočjo umetne inteligence, so vedenje zaposlenih izboljšali za 10,33 %. Ugotovitve potrjujejo pomen celostnih pristopov k spodbujanju in ocenjevanju KVH ter izpostavljajo potencial umetne inteligence pri razvoju izobraževalnih orodij in vedenjskih intervencij. Rezultati nudijo uporabne usmeritve za živilska podjetja pri izboljševanju KVH z uporabo sodobnih orodij in pristopov.

Title:Analysis of food safety culture and the development of nudging strategies in a selected food company
Abstract:In the master’s thesis, the food safety culture in a food company was examined, along with the possibilities for its improvement through behavioural nudges. The purpose of the research was to assess the existing state of food safety culture and to test the effectiveness of behavioural nudges in improving employees’ hygiene practices. A combination of quantitative and qualitative methods was used: a survey questionnaire (n = 200), semi-structured interviews (n = 10), and observations of employee behaviour in a common area before and after the introduction of nudges promoting desired hygienic behaviour. The survey analysis revealed high ratings of food safety culture (training effectiveness 4.6; risk awareness 4.5; workload 4.0; resources-environment 4.5; employee commitment 4.5; communication 4.1; leadership and peer support 4.2). However, the interviews highlighted content-related discrepancies in the responses. Key challenges relevant to management were identified (employee workload, communication issues, lack of employee commitment, lack of recognition, inconsistent rule enforcement, spatial constraints, outdated nudges). Management was assessed as professional and supportive, but often insufficiently engaged with employees due to workload. Visual and auditory nudges, designed with the help of artificial intelligence, improved employee behaviour by 10.33%. The findings indicate the importance of comprehensive approaches to promoting and assessing FSC and highlight the potential of artificial intelligence in the development of educational tools and behavioural interventions. The results provide practical guidance for food companies on improving food safety culture using modern tools and approaches.
