Title:Primerjava proizvodnih lastnosti in kakovosti mesa hitro in počasi rastnih prašičev krškopoljske pasme : magistrsko delo

Abstract:Avtohtona pasma krškopoljski prašič je pomembna za ohranjanje genetske in kulturne dediščine, cenjena pa je tudi zaradi prilagodljivosti različnim rejskim razmeram in zaradi dobre kakovosti mesa. V raziskavi smo pod enakimi rejskimi pogoji spremljali 29 prašičev te pasme, razdeljenih na hitro in počasi rastoče, ter ocenili njihove produkcijske lastnosti, klavno kakovost in kakovost mesa. V primerjavi s počasi rastočimi so hitro rastoči prašiči ob večjem prirastu dnevno konzumirali več krme, dosegli boljšo konverzijo in višjo živo maso ob zakolu, medtem ko so imeli slabši klavni izplen. Razlike v lastnostih klavnega trupa in mesa so bile relativno majhne, opazili smo samo nekoliko manj zamaščen trup in nekoliko manj intenzivno barvo mesa pri hitreje rastočih prašičih, prav tako so imeli ti nekoliko nižjo vsebnost enkrat nenasičenih maščobnih kislin v podkožni slanini kot počasneje rastoče živali. Meso hitro rastočih prašičev je izkazovalo tudi počasnejši padec pH-vrednosti po zakolu ter s tem povezano boljšo sposobnost za vezanje vode in manjšo trdoto, česar pa zaradi sovpadanja dneva zakola in poskusne skupine ne moremo neposredno povezati s hitrostjo rasti. Na podlagi pridobljenih rezultatov lahko zaključimo, da hitrost rasti ni bistveno vplivala na klavne lastnosti, medtem ko so razlike v kakovosti mesa bolj verjetno posledica vpliva različnih dejavnikov zakola.

Title:Comparison of production characteristics and meat quality of fast and slow growing pigs of the kraškopoljske breed
Abstract:The indigenous breed of Krškopolje pig is important for preserving genetic and cultural heritage and is valued for its adaptability to varying breeding conditions and good quality of its meat. In our research, we studied 29 pigs of this breed under the same breeding conditions. Pigs were divided into fast and slow growing group, and the groups were compared for their production characteristics, carcass quality, and meat quality. In comparison to slow-growing pigs, fast-growing animals consumed more feed per day, which resulted in better conversion and higher live weight at slaughter, but with lower carcass yield. The differences in carcass and meat properties were relatively small, with only slightly less fat in the carcass and less intense meat colour in the fast-growing pigs. This group also had slightly lower content of monounsaturated fatty acids in subcutaneous fat than the slower-growing animals. The meat of fast-growing pigs also showed a slower pH drop after slaughter, and thus a better water-binding capacity and lower meat shear force. However, since slaughter day coincided with the experimental group, we cannot causally link these differences to growth rate. Based on our results, we can conclude that the growth rate did not significantly affect the slaughter characteristics, while the differences in meat quality are more likely the result of the influence of different slaughter factors.
